Description
Cold pasta salad with chicken, tomatoes, basil
Ingredients
| 1 | pk | chi chi foo foo pasta |
| 1 | lb | chicken thighs |
| 1⁄2 | c | balsamic vinegar |
| 1⁄4 | c | olive oil |
| 4 | clv | garlic |
| 1 | cn | diced tomatoes |
| 1 | bn | fresh basil |
| 1 | ds | salt |
| 1 | ds | pepper |
Instructions
While eat lunch do the following:
Pre heat Grill,
Pour a little vinegar and olive oil over the chicken thighs to marinate,
Add a little salt and pepper to taste,
Throw on the grill, about 3 minutes per side,
Cook and drain pasta,
Dump can of tomatoes into the cooked pasta,
Crush garlic and add to pasta,
chop up chicken and add to pasta,
Pour some vinegar and oil into the pasta,
Chop up fresh basil and add to pasta,
Mix it up and put it in the frig.
When it is time to go to TNP put it in the car. This is most important. If you don't do this you will be eating pasta salad for a week.
Notes
Fresh tomatoes may be substituted in season. Any old pasta such as shells, bow ties, little corkscrew things, those little hats, whatever, will work
